VINIFICATION AND REFINING: Martinotti method. Produced with selected grapes from well-exposed company vineyards that allow complete maturation. Vinified in white, with fermentation at a controlled temperature. THINNING: selection of the best bunches 60 days before the harvest.
HARVEST: manual with particular selection of the bunches.
ORGANOLEPTIC CHARACTERISTICS: crystalline, pale straw yellow, with fine and persistent perlage, hints of yellow fruit, citrus with light notes of aromatic herbs. Enveloping entry with good softness and a long persistence.
PAIRINGS: excellent as an aperitif, with appetizers, first courses and second courses of white meat and fish.
