Spalla Cruda is a typical cured meat product from the Bassa Parmense area obtained from the processing of fresh meat (never frozen) from Italian pigs raised and slaughtered in compliance with the requirements. The anatomical portion consists of the front quarter of the pig. The finished product consists of this section, seasoned and stuffed into natural casing, tied by hand with string. The difficulty of production makes it difficult to find, but its inimitable taste places it alongside the more famous Culatello di Zibello. Average weight 1 kg, vacuum-packed.
